包粽子的米需要沥水时间30分,浸泡时间40分,米和水的比例为一比二,浸泡水温30度左右。这样泡出来的糯米,做成粽子色泽洁白、有光泽,具有粽子特有的香气,口感黏度适中,精而不烂。

糯米越泡会越黏,包的粽子越好吃。换句话说,只要泡米的方法正确,包粽子的米泡越久越好,至少要泡3个小时左右。正确的做法是用清水浸没糯米,每天换2~3次水,浸泡几天后再包粽子,由于细胞吸水将细胞壁胀破,黏性成分释放出来,可使粽子异常黏软。只要每天坚持换水,糯米是不会变质的,但水量要足,否则米吸足水后暴露于空气中,米粒就会粉化。
