肉焯水要等到水开吗

肉焯水不要等到水开。焯水是为了排除血污和肉腥味,热水下锅,肉会因受热迅速使表层蛋白质凝固,不利于排污。还会让肉变柴,吃起来很硬,导致口感不好。冷水下锅,将肉放进水里面,随着水温慢慢增加,肉已经适应了这样的温度,慢慢从外到里熟透,肉的口感就会变得很好。

焯水的方法:一种是开水锅焯水;另一种是冷水锅焯水。一般的原则是菜类用开水,肉类用冷水。

冷水锅焯水:冷水锅焯水是将原料与冷水同时下锅。水要没过原料,然后烧开,目的是使原料成熟,便于进一步加工。土豆、胡萝卜等因体积大,不易成熟,需要煮的时间长一些。有些动物性原料,如;白肉、牛百页、牛肚领等,也是冷水下锅加热成熟后再进一步加工的。

有些用于煮汤的动物性原料;也要冷水下锅,在加热过程中使营养物质逐渐溢出,使汤味鲜美,如用热水锅,则会造成蛋白质凝固。
