原因:

因为加的水少或者温度太低。反沙是白砂糖溶解后再结晶造成的,主要原因就是白糖的溶液变为超浓缩了。

解决措施:

1、白糖多加点水,小火熬,见起白泡,放入食品,翻炒均匀,关火后要继续翻炒一会,避免粘连。就不反沙了。

2、加柠檬酸,糖差不多要好了的时候,大概加一指甲盖就可以。
