腌板鹅怎样做来好吃

1、选取体重3千克到四千克的鹅,宰杀后煺毛、洗净,剖开腹部,除去内脏,剔除翅尖和脚,保留头部。沿胸骨突起至泄殖腔对半剖开,用力压平,制成板鹅坯;

2、进行腌制:每只鹅用盐200克到300克,将盐内加少许花椒,在铁锅内用文火炒热;

3、将鹅坯背朝下平放在桌上,用三分之二的热盐反复揉搓胸、腹腔、翅、腿、颈等部位,余下的三分之一热盐可揉搓背部;

4、将用热盐揉搓后的鹅坯背部向下放在腌制缸内,逐个堆码。1只缸约放40只到50只,将来用完的盐撒于鹅坯四周,顶部用大石块压上。经1周,注意气温高时可缩短至3天到4天,取出沥干水分,用竹片或树枝十字交叉,撑开胸腹部;

5、腌液的配制:按鹅胚100千克计,取清水50千克对盐15到18千克煮沸,使盐溶化成饱和溶液,拌入碎老姜250克、桂皮180克、八角150克、花椒120克、炒茴香50克,边搅动边倒入缸中,腌制20余小时即可。
