1、将川椒100克、八角150克、桂皮100克、丁香50克、红曲米50克、甘草50克、装入“药袋”;肥肉500克切片,炸出猪油后弃渣。取大不锈钢锅,倒入清水12.5千克,老抽1500克,生抽1500克,鱼露500克,冰糖150克,精盐500克,用旺火烧开后,放入猪油,南姜250克,青蒜250克,炸蒜头150克,芫荽250克,绍酒250克,“药袋”煮开20分钟,便成卤水。卤水存放时间愈长愈香。

2、保存方法:每天早、晚需烧沸一次,“药袋”一般15天换一闪,每天还要根据用量的损耗,适当按比例加入生抽、鱼露、老抽、盐、糖、酒,每天卤制后,需将南姜、蒜头、青蒜、芫荽捞起,清除泡沫杂质。不能有水份混入防止变质。
