东北大酱块发酵方法是室温控制在28℃—32℃之间,时间的长短随温度变化而改变,时间大约在60天左右。发酵大棚的温度通常控制在30℃—40℃为宜,每个酱缸早、晚各搅动一次;发酵到酱色金黄、酱香浓郁、无酱疙瘩、黄豆酱没有气泡喷出为宜。
