馄饨的制作程序可分为:

1、制皮,选上好面粉,加少量和适量水揉匀揉透,进行擀制,其过程中一定要用干淀粉,边撒干淀粉边擀制,直至将皮对着灯光能看到模糊的灯丝为好,后将皮改刀成5厘米见方的薄片;

2、制馅,五花肉可用机械绞碎法或刀排碎法成茸后,加入生姜末、葱末、糖、盐、味精、酱油、搅拌均匀,口味以咸鲜为好。同时,把必需的辅助调味料油渣末准备好,待用。

3、包馅,左手托皮,右手用刮子挑入馅心,左手从小拇指开始依次把皮子向里靠拢,最后用右手以竹括子再把皮子向里靠一下,左手一拢即成。

4、下汤锅,水锅上,烧开,把生馄饨倒入锅内,勺子沿着锅边把馄饨搅动一下使之起身,后盖上锅盖焖一会儿,至馄饨浮于水面;

5、出锅,汤碗里放入大油、酱油、味精、油渣末、葱末,将水锅里的汤冲入碗中,后用爪篱捞15至20只馄饨于碗中,撒上胡椒粉即可。
