1、因为加盐后水的沸点会略有升高,煮饺子时,由于水的沸腾,锅里的水翻滚程度很大,这时饺子皮就容易破裂,特别是饺子皮的结合处,加盐后,水的沸点略有升高,同样温度下,沸腾程度降低,所以皮就不那么容易破了。同时保证饺子能煮熟;

2、盐的成分主要是NaCl ,它在水中点节产生钠离子和氯离子, 淀粉在正负离子作用下更容易凝结,所以饺子自然不会破,而且光滑。
