牛鞭汤的做法和配料窍门

1、主料:牛鞭1-2根。

2、调料:熟大油75克,花椒油25克,酱油15克,味精、白糖各5克,盐6克,料酒15克,湿淀粉40,花椒、糖色各少许,葱段100克,蒜瓣20克,姜块50克,鸡汤500克。

3、先将牛鞭洗净,剪开外皮用开水烫一下,捞出后将外皮撕去,洗净放入锅中。锅内放水2.5公斤,加入葱50克、姜25克、花椒,直至将牛鞭煮烂,捞出一破两半,将尿道除去,切成4~5厘米的长段。

4、炒勺上旺火,将熟大油烧热,加入葱50克,姜25克和蒜瓣煽炒出香味,加入料酒、酱油、再加鸡汤、白糖、味精、盐,用糖色将汤调成汪红色,把牛鞭放入汤中用文火煨至汤汁干浓,拣出葱、姜,用湿淀粉勾成浓流芡,淋上花椒油即可。
