米粉汤料怎样调得鲜美

主料:牛骨头3斤,猪骨3斤,牛腱子肉20斤;

配料:酱油5斤,水50斤,精盐6斤,冰糖3两,高度酒3两,味精250克;

步骤:

1、将上述香料入大锅中加入50斤清水,入牛骨头、筒骨、先用大火烧开,后用小火慢煲,5小时后加入牛腱子肉,卤熟后捞出待用。卤水继续煲制,一般经过18至24小时香料味基本出来,后捞出香料留下次再用;

2、水中加入精盐,味精,酱油,冰糖,酒,调味即成;

3、卤熟的牛腱子肉入5成油锅中炸制,外皮略脆即可捞出;
