熟牛肉丸的做法和配方

1、材料:鲜精牛肉5000克、干淀粉750克、精盐120克、鸡精50克、味精50克、白糖200克、食粉10克、胡椒粉25克、陈皮末7克。

2、精牛肉洗净后剔净筋膜,用绞肉机绞三遍,纳盆,加入精盐、食粉、味精、鸡精、白糖、胡椒粉,并搅打至起胶。

3、干淀粉用1200克清水调匀,然后分数次倒入牛肉盆中搅匀,接着搅打至起胶且用手摸到有弹性时,加盖放入冰箱中冷藏一夜。

4、将冷藏的牛肉糁取出来,加入陈皮末拌匀,然后用手挤成重约15克的丸子,放入清水盆中浸15分钟。炒锅上火并掺入清水,下入浸好的牛肉丸,以小火煮至成熟再捞出,放入清水盆中浸凉后,捞出沥水即成。
