如何煮化巧克力

煮化巧克力可用直接加热熔化与分段加热熔化两个方法。

直接加热熔化法如下:

将巧克力切成小块后装入容器中;隔水加热至熔化;水沸即熄火,隔热水不停地搅拌至巧克力熔化,避免产生气泡;留些切碎的巧克力块,以备盆内巧克力量少,温度过高或出现油水分离时加入,以调整及降低温度;选择比外层装水的盆高的容器盛装巧克力,避免水汽或水滴落到巧克力上。分段加热熔化法如下:

将三分之二的巧克力切成小块后装入容器;隔水加热至熔化,不可直接加热;水沸即熄火,隔热水搅拌至巧克力熔化,温度为45至50摄氏度;将剩余的巧克力块慢慢加入,调整或降低温度为30至31摄氏度即可。
