将未打发的奶油放于2℃-7℃冷藏柜内24至48小时以上,待完全解冻后取出。奶油打发前的温度不应高于10℃,低于7℃都会影响奶油稳定性和打发量。轻轻摇匀奶油后,倒入搅拌缸内此液体奶油温度要求在7℃-10℃,容量在搅拌缸的10%-25 %(将产品打发至搅拌球的球径最大处) 。室温过高或过低会影响打发后的奶油品质及稳定性。用中速或高速打发,(160-260转/分即可),直至光泽消失,软峰出现即可。置于搅拌缸内未打发奶油容量不能低于缸容积的10%,也不能高于缸内容积的25%,否则会影响产品的质量。室温过高或过低会影响打发后的奶油品质及稳定性。
