蒜蓉酱不辣的制作方法

1、蒜蓉先洗再挤:切好的蒜蓉不能直接下锅炸,因为会释放大量黏液,这些黏液会让炸出来的熟蒜蓉味道发苦,蒜蓉切好后先泡洗,把黏液泡沫洗出,再用纱布裹着蒜蓉,用力挤出水分,减轻蒜蓉携带的粘液苦涩;

2、炸蒜油温不能高:油炸蒜蓉的过程,是把蒜蓉带有的水分炸干挥发,并带走蒜蓉辛辣,因此炸油的温度不能高,小火慢炸,否则高温一炸蒜蓉焦糊,就会带有焦糊的苦涩味;

3、熟蒜蓉炸好后再调味:不管是单纯的添加盐糖生抽小米辣,还是与配菜搭配,都要先把熟蒜蓉炸好,调制分量比例为:熟蒜蓉2/3,其余材料1/3以内,让熟蒜蓉和配料、调料间的口味得到平衡,互不抢味,让各自的味道更突出。
