如何做出正宗的山西风味回锅肉

主料:猪腿肉 。辅料:青蒜苗、青椒、仔姜、蒜苔等。 调料:郫县豆瓣,甜酱,酱油,混合油。

制作方法:

1、将肥瘦相连的猪腿肉刮洗干净,放入汤锅内煮至肉熟皮软为度,捞出冷透后,切成5厘米长4厘米宽 0.2厘米厚的片;

2、青蒜苗或其他辅料切成片状,炒锅置旺火上,放入猪化油烧至六成热;

3、下肉片炒至吐油,肉片呈灯盏窝状;

4、下剁茸的郫县豆瓣炒上色,放入甜面酱炒出香味,加入酱油炒匀,再放入辅料簸锅炒断生起锅即成。
