红烧小排的做法和配方

1、材料准备:排骨、姜片、葱段和盐各适量。八角、小茴香、桂皮、丁香、花椒、老抽各适量。

2、先把排骨斩成小段,入冷水锅,大火煮沸后撇去浮末,把血水倒掉,排骨待用。这个步骤叫做飞水, 用以去除肉的腥味及表面油污,使汤清且香;

3、把炒锅烧热,加入少许花生油,四五成热时加入适量白糖,火要用微火,而且要用铲子不停地轻轻搅动,以免把糖烧焦;

4、白糖慢慢融化后,变成可爱的橙黄色;

5、飞水后的小排倒入锅中翻炒均匀,时间不要太长,以免肉质发柴;

6、锅中加入冷水,再把小排和所有调料(香料要用纱布或带孔的专用容器包好,以免混入汤中)放入锅内,水面要高出肋排一公分左右;

7、先用大火烧滚,然后转用文火慢炖,一个半小时后,看汁收得差不多,香喷喷的红烧小排就可以出锅了。
