选用新鲜无异味的牛油,洗净后切成小块,放入净锅中,掺入适量的清水,投入大蒜和姜块(拍破),倒入料酒,上火熬至水分干且香味溢出时转小火,继续熬至全部出油后,打去渣子,即得牛油。若选用市场上制好的牛油,可先将牛油放入沸水锅中融化后,倒入料酒,上火熬制片刻,除去异味,滤净杂质,再将表面油脂,放入另一口锅中,加入姜块和大蒜,上火熬至水分干时,拣去姜蒜,即得干净牛油。
