1、因为排骨汤里加醋形成的酸性环境,有利于骨骼中钙质的溶出。

2、从营养获取角度考量,炖骨汤的时候,在水烧开后,可加适量的醋,因为醋能使骨头里的磷、钙溶解到汤里,增加汤的营养,利于肠胃吸收。

3、但是在烹饪骨头汤时,为获得适宜的口感,一般加醋量不会太多,而且加入的食醋在高温作用下部分挥发,溶解在骨头汤中的醋量本身就很少,能够溶出的钙质也就微乎其微。
