1、首先食材一定要洗净 腥味较重的食材可以焯水(鱼除外)去除汤中的腥味。

2、冷水下料(肉类食材)开水会使蛋白质迅速凝固,不易出鲜味。

3、最好不要放香料,如果需要,一到几片姜足矣。

4、最好选用质地良好的白陶锅熬汤。

5、排骨牛羊肉等腥味较重的食材做汤 应大火烧开 切忌加盖 烧开后捞去浮沫再转小火加盖熬煮1.5小时即可。
