椒麻鸡是一道流传于新疆、四川和重庆等地的传统名菜。主材料是开膛鸡肉,主要烹饪工艺是煮。成品麻醇咸鲜,质地软嫩,清爽可口。

椒麻鸡的制作方法如下:

材料:嫩公鸡、葱叶、味精、川盐、红袍花椒、鸡汤、酱油、芝麻油。

制作步骤:

1、选净白皮嫩鸡,放入汤锅内,煮至刚熟捞起,放入凉开水中漂凉后取出,搌干水;

2、取鸡腿肉和鸡脯肉,片成4厘米长,一点五厘米宽的片,依刀口在盘中摆成三叠水或风车型;

3、将生花椒去籽,鲜葱叶、川盐混合铡制成极细的“葱椒茸”盛入碗内,加酱油、味精、芝麻油、鸡汤调成椒麻味汁,淋在鸡片上即可。
