腊肉普通制作方法和配方

1、用料:猪肉5公斤,盐150克,花椒25克,松柏锯末1.5公斤。

2、切条、腌制:将肉切成长30厘米,宽3至5厘米的条,用竹扦扎些小眼,用经过炒烫晾至温热的花椒和盐进行揉搓,搓后放入瓷盆,皮朝下肉朝上,一层层码放,最上一层用重物压住。每隔2天翻倒1次,腌10天后,改为每天翻倒1次,再腌4至5天,取出,用绳穿上,吊挂通风处晾至半干。

3、烟熏:大铁锅内放锯末,上架铁箅子,把晾好的肉置其上,盖上锅盖,然后烧火。当锯末受热冒烟时停火,肉熏上黄色,其水分已干即成。
