1、在大蒜破碎时,加入一定浓度的半胱氨酸可有效地防止蒜泥绿变,而对蒜泥风味的影响不大。

2、在加工前,对大蒜进行热处理,可防止蒜泥绿变,但却使蒜泥蒜味失去,风味变淡。

3、加工前,将大蒜在30~35℃温度下贮藏一段时间,可防止蒜泥绿变,且不影响蒜泥的风味,是一种比较理想的方法。
