福建酸笋做法

腌酸笋的季节在春秋两季,当竹子出笋后,长出约30公分高时,便可连根砍下,剥去笋壳,切成笋丝或笋片,放于陶罐中,撒上盐巴,置于火塘边,烘烤数日,酸味即出,便可随食随取。

酸笋可单独吃,也可和其它鱼肉、蔬菜一起煮着吃,其味鲜美,凡食者无不称道。
