加盐的好处:

1、增加风味:添加适量的盐可产生薄弱的咸味,还能与糖相互作用,降低甜味,亦能引出面团本身的风味;

2、强化面筋:食盐能增强面筋的筋力,使其质地变密,增强吸水性能,改善面筋的立体网状结构,增加面筋的弹力,使面团膨胀、延伸时不易断裂,筋度稍弱的面粉,需要适当增加盐的用量,而强筋度的面粉宜用比较少的盐;

3、食盐的吸水性对于面团还有另外一个重要意义,盐的存在可以保持面团内部的湿度,在潮湿的环境中可继续从四周吸收水分,让面团保持柔软。而披萨成品烘烤后,盐的存在也能让披萨不易变质腐败,延长了货架期;

4、改善色泽:适当量的用盐,可以改善面包的色泽和组织,使色泽洁白好看,组织柔软细密;

5、抑制细菌:盐在面团中所引起的渗透压,可延迟细菌的生长,对杂菌有抑制作用,甚至可杀灭细菌,这样就能延缓面团的腐败变质,减少面团的浪费。
