煎鱼时为什么总粘锅

因为鱼肉细嫩,且没有较粗的筋络,纤维组织不紧密,导热性差,所以容易粘锅。

煎鱼不粘锅可按照下述四种方法:

1、先将锅洗净、擦干、烧热,鲜生姜在锅底抹上一层姜汁,然后放油加热,油热煎鱼;

2、洗净的鱼,使沾上一层鸡蛋糊,然后下锅煎制,煎至金黄色时翻煎另一面;

3、将洗净的鱼、鱼块,沾上一层薄薄的面粉,放入油锅煎制,能使鱼形完整、鱼皮不粘锅;

4、煎炸前,鱼或鱼块用细盐、料酒腌渍一下,然后下油锅即可。
