1、把多余的初乳放入广口桶内,陆续装满,将桶置于清洁、干燥、背阴的室内,任期自然进行乳酸发酵。

2、发酵的适宜温度是15摄氏度,为防止奶中干物质的分离,给与搅拌,每天不少于2次。

3、静置2至3日后发酵开始,由正常奶香逐渐变成酸奶香,并形成豆腐状,可以持续30天左右。这时的pH值是4、2至4、4。

4、约40天左右开始出现腐败臭,并见到脂肪、乳清、沉淀物3层分离现象。
