水煎包的做法和配方

1、材料:精粉500克,猪肉250克,大葱125克,酵面200克,酱油50克,食油100克,白菜700克,精盐、碱面、调料面、姜末、清水适量。

2、面粉与酵面兑好加入温水和成面团,再碱水揉匀稍饧上案,揪成40个小块,逐个擀成小圆片。

3、把肉剁碎,放入酱油、精盐煨起,再将切碎的姜、葱与调料面一起放入肉里拌好,然后再放上剁碎,压出水分的白菜及香油,拌匀成馅。

4、用皮包上馅成大圆饺子,俗称扁食,似相公帽摆放在刷匀油的深底的鏊子上(专用鏊子),摆满为止,淋入食油50克,盖上盖煎5分钟,再倒入800克白面汤清水内兑入少许面粉搅成面汤,再盖住煎焖使之变成蒸气传热焖熟,再淋入50克食油,再盖住焖煎5分钟。底部呈焦黄色时,用铲将四周与鏊底分离,大翻鏊,离火即成。底色金黄,焦脆,馅浓香可口,色香味俱佳。食用时用小铲铲人盘内即可。
