醉排骨制作方法

1、主料:猪排骨400克。

2、调料:花生油适量、蒜适量、生抽适量、醋适量、淀粉少许、白糖适量、黄酒少许、芝麻适量。

3、将猪排斩成约l寸长的小块,用黄酒和盐拌匀,再用适量生粉、和水适量搅拌均匀;

4、将生抽、糖、醋和黄酒,大蒜、葱花调成汁备用;

5、烧热锅,下油,至六成熟时,把猪排逐块放入油锅炸至结壳捞出,拨开粘连,捡去碎末,油温升至七成时,再将排骨下锅复炸至外壳松脆捞出,装入一稍大的碗中(以便拌调料);

6、迅速将调好的汁倒入炸好的排骨,连续翻拌均匀,装盘撒上熟芝麻即可。
