1、羊排是指羊的肋条即连着肋骨的肉,外覆一层层薄膜,肥瘦结合,质地松软。适于扒、烧、焖和制馅等。那么羊排怎么切呢?

2、先将肉用布或毛巾裹紧,成长条状,放进冰箱冷冻1小时(-18度),表面冻僵后再切,一定不能时间长冻透后就不好了,一定要急冷速冻,顶刀切,刀要快,这样才能切出涮羊肉的那种薄片。

3、一斤肉通脊切270-300片,腿肉切220-250片,厚度在一毫米左右,扶肉的手不要用手掌压肉,手掌的热量回让冻僵肉软化,用两三手指压肉就好了。
