1、白切鸡是是热水下锅,可以使它表面的肌肉能够快速的收缩,不会让鸡的原味流失,但是不要把水煮沸,要慢慢浸烫熟。

2、将鸡肉下锅时机,务必是热水下锅,但不是沸腾的开水,而且要注意火候和水温。火不要烧大,煮15到20分钟,根据鸡的大小和老鸡、嫩鸡来决定。成功的白切鸡应该是“肉熟骨不熟”,以“肉中无血,骨中见血”为最佳。
