正宗绿豆糕的做法和配方

1、绿豆粉13公斤,绵白糖或白糖粉11.7公斤,糖桂花0.25公斤,清水适量。

2、拌粉:将糖粉放入和面机里,加入用少许水稀释的糖桂花,搅拌:再投入绿豆粉,搅拌均匀,倒出过80目筛,即成糕粉(以能捏成团为准)。

3、成型:在蒸屉上铺好纸,将糕粉平铺在蒸屉里,用平板轻轻地推平表面,约1厘米厚;再筛上一层糕粉,然用一张比蒸屉略大一点的光纸盖好糕粉,用糕镜(即铜镜、铜捺)压光;取下光纸,轻轻扫去屉框边上的浮粉,用刀切成4厘米×4厘米的正方块。

4、蒸制:将装好糕粉的蒸屉四角垫起,依次叠起,放入特制的蒸锅内封严;把水烧开(不宜过开,以免糕色变红),蒸15分钟后取出,在每小块制品顶面中间,用适当稀释溶化的食用红色素液打一点红;然后将每屉分别平扣在操作台上,冷却后即成。
