豫菜蒸丸子的制作方法

1、主料:猪里脊肉200克。辅料:青蒜25克,鸡蛋黄50克,淀粉(蚕豆)8克。调料:味精2克,盐3克,香油10克,小葱10克。

2、里脊肉剁成泥状;

3、将肉泥、鸡蛋黄和湿淀粉、葱花、食盐、味精一起搅拌均匀;

4、把拌匀的肉,挤成直径2 厘米大小的丸子,盛入盘内;

5、将盘内的丸子入屉上笼用大火蒸熟;

6、青蒜择洗干净,切段;

7、清汤加盐烧开后,加入蒜苗、味精、香油,浇入盛丸子的盘内即成。
