如何制作螺蛳粉汤底

一、材料:石螺10斤,猪筒骨5斤,鸡骨架3斤,鸡油2斤,八角6克,沙姜8克,丁香2克,花椒15克,桂皮10克,草果10克,砂仁12克,干辣椒1斤,油辣椒红0.5克,桂林豆腐乳15块,紫苏0.5斤,酸笋1斤,清水50斤,姜0.5克。

二、步骤:

1、将石螺用清水洗净,侵泡2日后,剪去尾尖,飞水冲洗后待用;

2、猪骨,鸡骨飞水后入锅上火炖开后,鸡油清洗放下汤锅,熬1、5小时出味;

3、石螺滤干水后,入锅炒干水份后起锅;

4、锅洗净上火,放入花生油烧至六成热后,下姜炝锅,放入香料,干椒,酸笋,烹酒,炒至干香后,倒入骨汤中熬至出味,调腐乳,盐,鸡精,味精,柳州鲜味粉,冰糖适量,熬至40分钟下红油起锅即可。
