做抄手用前腿部位的猪肉,抄手肉片是四川一带的汉族小吃,属于川菜系。此菜抄手酥香,肉片细嫩,趁热食用,其味尤美。因抄手上桌后,将滋汁淋上即发出响声,故又名“响铃肉片”。抄手是四川叫法,其实就是馄饨。将猪肉切成薄片,加料酒、芡粉五钱,川盐四分拌匀待用。葱、姜、蒜切成片,泡辣椒切成马耳朵葱,盐、酱油、味精、胡椒面、白糖、醋、芡粉、鲜汤兑成滋汁。
