蒜香骨头的做法和配方

1、原料:猪肉排600克。

2、调料:蒜茸100克、泡辣椒末15克、红尖椒末15克、洋葱末15克、精盐、胡椒粉、料酒、味精、鸡精、酱油、花椒、孜然粉、椒盐、熟芝麻、鲜汤、水淀粉各适量、色拉油1500克。

3、排骨洗净,斩成8厘米长的段,入沸水锅中“氽一水”后捞出,沥干水分。

4、炒锅置火上,放入少许色拉油烧热,下入泡辣椒末和花椒炒香出色,掺入鲜汤,烧沸后下入排骨,调入精盐、胡椒粉、料酒、味精和鸡精,用小火烧至排骨八九成熟时,捞出沥干水分。

5、将沥干水分的排骨纳盆,加入蒜茸、酱油、水淀粉抓匀,腌片刻。

6、炒锅置火上,放入色拉油烧至六七成热,下入排骨炸至焦黄且熟时捞出。锅留底油,下入红尖椒末、洋葱末和椒盐炒香,再下入炸好的排骨,撒入孜然粉、熟芝麻,翻匀起锅装盘即成。
