1、将五花肉去皮去筋,斩成细泥,与蛋白(2只)、葱、姜、五香粉、酱油、盐、菱粉搅匀。另将鸡蛋(3只)用力来要透,再加盐、菱粉调成糊。

2、在净滑锅里,加猪油进去后,将鸡蛋糊倒入,随即提锅慢慢转动,把蛋糊摊成蛋皮,然后取出冷却。

3、将肉泥放在蛋皮上全面铺开,再卷成蛋卷,上笼蒸熟。

4、另用干锅,锅底放木屑,上面放熏笼,熏笼上放蛋卷,然后点燃木屑,熏约十分钟取出抹上麻油,片成薄片后装盘。
