制作酒枣方法

1、原料:鲜枣10公斤,高度粮食白酒1公斤,耗酒约0.5公斤,按此比例配料。

2、清洗风干,选好的枣果用流动清水冲洗干净,摊放席上,晾除表皮水分,备用。

3、涮酒:将晾除浮水的鲜枣按枣与酒10:1的比例分批放入酒中涮过捞出,涮过的酒体要求清沏如初。

4、入缸:将涮酒枣装入事先洗净揩干的缸内,缸口盖一层厚牛皮纸,捆紧扎严,盖双层塑料布再捆紧扎严,要切实严密封紧,勿使漏气,15天即可将枣醉好。
