自制肥牛火锅的做法步骤

1、原料:牛里脊肉200克,牛腰子100克,熟牛肚100克,香菇100克,大白菜叶200克,菠菜150克,油菜花100克,粉丝50克,芹菜100克。牛肉汤2000克,熟猪油、料酒、酱油、白糖、味精、胡椒粉、葱段、盐、姜块、干辣椒、花椒粒、虾籽均适量。

2、制作方法:

(1)将牛里脊肉洗净,剔去筋膜,切成薄片;牛腰子洗净,撕去膜,一剖两半,去净腰臊,再片成薄片;香菇去蒂,洗净,切成条;熟牛肚用开水烫洗干净,切成薄片;大白菜叶洗净,切成条;菠菜、油菜花分别洗净,待用;芹菜去叶、老筋,洗净,切成小段;粉丝泡软后洗净,剪成长段;干辣椒去蒂,泡软后切成小段。

(2)电锅点旺火,放植物油烧热,爆香葱段、拍松的姜块、干辣椒、花椒粒,烹人料酒,拣去葱、姜不要,倒入牛肉汤,加虾籽、酱油、白糖、胡椒粉烧开,再盛入火锅中,插上电放在桌子中间,四周围上荤、素菜盘。食用时加点盐、味精和熟猪油,边涮边吃。
