制作卤鸭方法

1、原料:治净的嫩鸭5只(每只重约1000g)、老姜200g、葱100g、干辣椒节30g、A料(八角15g、桂皮10g、肉豆蔻15g、甘草3g、沙姜3g、良姜10g、草果15g、丁香1g、砂仁5g)、B料(料酒500g、酱油400g、老抽200g、南乳汁150g)、白糖300g、味精50g、鸡精50g、蜂蜜适量。

2、把治净的鸭放入沸水锅里汆一水,捞出来洗净血水并控干;A料用热水稍泡待用。

3、取一口大耳锅放入竹箅子垫底,铺匀姜、葱、干辣椒节和A料,摆放上鸭子(背朝下),加B料,注入清水以淹没鸭身为度,待大火烧开后转小火卤约1小时,其间还要将鸭身翻动2-3次,见鸭中翅骨肉分离时,调入白糖、味精、和鸡精,再把火力稍开大,并用手勺舀起卤汁不停的淋在鸭身上,等到鸭身颜色变得红亮、卤汁粘稠且冒小气泡时,离火。

4、将卤好的鸭子捞出来,趁热在鸭身表面刷匀蜂蜜,而卤鸭的汁水则用漏勺滤去料渣。走菜时,把卤鸭斩件摆盘,最后淋少许卤鸭的汁水便好。
