如何做涮羊肉的麻酱

1、涮羊肉火锅麻酱料原料:两勺芝麻酱、两块酱豆腐、一勺白糖、一勺韭菜花、一勺鸡精、一勺辣椒糊或者辣椒油、胡椒粉、花椒油、料酒少许、炒熟的芝麻(如果没有,就在制成涮锅调料酱后再加点香油即可)。

2、做法:原料调好,然后一点点的加凉开水,筷子顺一个方向用力搅拌,直到搅成粥状,即可。不用放盐和酱油,因为腐乳和韭菜花都比较咸。(上面的比例基本可以满足三个人需要,可以根据人数适当增加。)

3、注意事项:水一定要加冷开水,热水搅拌不好容易成疙瘩。水要随着搅拌一点点加,切不能一次加多,否则酱就 懈了,不黏稠了。加点炸香的花椒油更好吃。吃时可以加点香菜末或香葱。
