用手和面粉技巧

1、包饺子面:

500克面粉加50~60%的温水,放2%的精盐,充分揉和,醒面30分钟开始操作。面中放盐不仅会增加面筋,出锅的饺子也不粘皮。

2、擀面条面:

500克面粉加35~40%的温水,放2%的精盐及少量食用碱,醒面30分钟后操作。这样不仅会增加筋力,而且口感光滑,不易断条。

3、蒸馒头面:

500克面粉加50%左右的温水,放酵母1%,可加少量白糖,充分揉和后置暖处充分醒发,这样蒸出来的馒头柔软芳香。

4、烙饼面:

500克面粉加60~80%的温水,醒面20分钟后揉做,效果极佳。
