1、原材料 :新鲜鸭蛋、纯碱、生石灰、食盐、茶叶末、草木灰、松柏枝。

2、按一定比例要求。例:鲜鸭蛋80枚,重约6公斤,水5公斤,纯碱(碳酸钠)330g,生石灰1400g,草木灰800克,食盐200g,茶叶末100g,柏树枝25克)将备好的食盐、茶叶末、柏树枝放在锅内,加水煮沸,趁热慢慢倒入预先放好生石灰、草木灰、纯碱等辅料的缸内,用木棍不断搅拌。待全部辅料溶化后,即成料液,冷却后备用。将挑选好的鲜鸭蛋,放入清洁的缸内。至缸沿15厘米,放入竹、木条卡住,防止腌制时鸭蛋上浮。将料液搅拌倒入缸内,淹没蛋面,而后用塑料布封口密闭

3、松花蛋的成熟期约为35~45天。成熟的标志是,蛋剥壳检查,蛋白呈茶色透明状,不粘壳,凝固良好,蛋黄呈绿褐色,并有饴糖状核心。达到上述标准时,应立即出缸,以免老化。
