卤猪头的技巧

1、原料:猪头、排骨浓缩卤汁、花椒、大葱、鲜姜盐。

2、去掉猪头上的毛,挖净耳毛等杂物,洗刷干净。再挖出口条,将猪头劈开,取出猪脑,浸泡在清水中,排出血渍,然后用温度为80℃的水浸泡,15~20min即可。

3、装锅前要检查猪头的老嫩程度 ,老点的放在下面,嫩点的放在上面。然后放入水和排骨浓缩卤汁。先用大火煮沸,1h后改用小火,前后共煮2~3h,以能用手将骨肉扒离为准。掌握火候与时间很重要,火大了,时间长了,猪头煮烂,降低出品率;火小了,时间短了,产品的色、香、味俱差。

4、猪头出锅以后,拆除骨头和天梯,挖出眼球,再将肉放入原锅中煮制。回锅煮制是使猪头肉再进味,并达到消毒的目的。以小火煮15min即可。
