开封灌汤包的做法及配方

1、配方:精粉4斤,猪后腿肉3斤,小磨香油500克,酱油400克,料酒60克,姜末60克,味精22克,盐40克,白糖14克,水适量

2、将猪后腿肉绞成馅。加上酱油、料酒、姜末、味精、盐、白糖。冬季用温水4升,夏季改用凉水3.5升,分5~6次加入馅内,搅成不稀不稠的馅,最后放入小磨油搅匀。

3、发好的面团,揉成长条。切成小段,揉成小面团。把小面团擀成包子皮。包入20克重的馅,捏18~21个褶。

4、将包子生坯放入直径32~35厘米的小笼里,用旺火蒸制15分钟左右即可出锅。
