汆鱼丸豆腐汤

1、食材:草鱼肉,豆腐,香菜。

2、辅料:料酒、葱、姜、盐、味精、淀粉。

3、将草鱼刮去鳞,除去内脏及腮,洗净后拆去骨头,放在砧板上,先用刀将它捶烂,再刮出鱼肉。

4、将鱼肉用刀剁成极细的茸,放入碗内,加入料酒、葱姜汁和适量水,放入盐、味精、淀粉拌匀,用筷子快速搅拌上劲。

5、豆腐切成小丁。锅内放清水烧热(即将煮开时),将鱼肉用手挤成小丸子,放入锅内,用小火煮熟,放入豆腐丁,待熟时加入盐、味精调味即成。
