生炒猪肚脆嫩小妙招

1、准备食材:猪肚整块;食用油适量:生姜适量;花椒适量;大蒜适量;辣椒适量;白酒少许。

2、先把猪肚切成丝(不要切太细,最好是斜着切,就像把四季豆切开一样粗细)。

3、再把油放入锅中烧开,生姜、花椒、大蒜、辣椒放入锅中,然后爆炒两分钟,到入少量高度酒于锅中、点燃。火熄灭后放入其他辅助调料,差不多可以起锅了。

4、爆炒出来的肚条保证脆嫩,但值得注意的是必须掌握好火候,不然也会炒老。多试几次就可以了。
