生姜腌制的方法

1、原料配方:生姜(去皮)100公斤、食盐16公斤。

2、制作方法:选用白露前的嫩姜。用清水选净鲜姜后,搓去外皮,放入笸箩内,每放一层姜撒一层盐,上多下少。每天翻拌一次,5~6天后即为成品。

3、质量标准:色金黄、质脆不烂,具有浓厚的鲜姜气味。
