酥肉制作方法

1、主料:猪肋条肉(五花肉)500克。辅料:鸡蛋150克,淀粉(玉米)100克。调料:盐10克,花椒10克,酱油15克,大葱15克,姜5克,胡椒粉5克。

2、干淀粉擀细用鸡蛋调成不稀不干的淀粉,手提时能流成线状即可;

3、猪肉用去皮的五花肉,切成约3.3厘米大的小块,用盐拌过,再放入蛋淀粉内裹匀;

4、炒锅置旺火上,菜籽油烧至七成热时,将裹满蛋淀粉的猪肉逐一放入锅内,全部炸完后,再重炸一次立即捞出;

5、用铝锅将汤烧开,放入炸好的酥肉,同时放入葱、姜、花椒、胡椒和盐,汤开后移于小火上炖至肉烂。
