扒鸡的家常做法和配方

1、主料:鸡1500克。

2、调料:八角5克,酱油35克,盐15克,白砂糖5克,料酒25克,姜5克,大葱15克,淀粉(玉米)20克,味精5克,花生油60克。

3、将鸡从脊背开膛,去嗉子、内脏,剁掉下腿;

4、将上腿膝节处用刀背拍折,头部从眼睛处连嘴剁去后洗净,待用;

5、坐汤锅,上旺火,下鸡,见大开后改小火,煮至七成熟后捞出;

6、用清水洗去血沫,放入盘内,放姜片、葱段、大料、精盐、料酒、高汤,上屉蒸熟时下屉取出;

7、折去胸骨,并把胸骨撅折,拣去葱段、姜片和大料;

8、炒勺上火,放油、葱末炝勺;

9、烹料酒、酱油,将鸡连汤一起溜入勺内(鸡脯朝下),下白糖、味精,用中火焖至汤汁浓稠时;

10、用水淀粉勾芡,淋明油,出勺,装入大平盘即成。
