葡萄酒酒精发酵期间很短一般10天左右,这段时间是需要搅拌的,而且要开小口保证气体能散出,因为酵母大量繁殖需要氧气,但是搅拌时一定要注意卫生。一天2次以上,以充分均匀发酵。酒精发酵后导出清液到另外一个容器,之后不需要搅拌,过一段时间发酵完毕后,密封冷藏。
